How To Make Instant Potato Pancakes

Ingredients
- 2 cups instant potato mix
- 1 cup water
- 1/2 cup all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp garlic powder
- 2 eggs, beaten
- 1/4 cup milk
- 2 green onions, chopped
- Vegetable oil for frying
Instructions

In a large bowl, combine instant potato mix and water. Let it sit for 5 minutes to allow the potatoes to absorb the water.

In another bowl, whisk together flour, baking powder, salt, black pepper, and garlic powder.

Add the beaten eggs, milk, and chopped green onions to the potato mixture. Mix well.

Gradually add the flour mixture to the potato mixture. Stir until well combined.

Heat vegetable oil in a frying pan over medium heat.

Scoop 1/4 cup of the potato mixture and drop it into the hot oil. Flatten it slightly with a spatula.

Cook for 2-3 minutes on each side, until golden brown and crispy.

Remove the pancakes from the pan and drain on paper towels to remove excess oil.

Repeat with the remaining potato mixture.

Serve the instant potato pancakes hot with sour cream or applesauce.
