How To Make Blini (Russian Pancakes)

Ingredients
- 2 cups all-purpose flour
- 2 cups milk
- 2 eggs
- 1 tsp baking powder
- 2 tbsp sugar
- 1/4 tsp salt
- Butter or oil for cooking
Instructions

In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.

In a separate bowl, beat the eggs. Gradually add the milk and whisk until well combined.

Pour the egg and milk mixture into the flour mixture and stir until you have a smooth batter. Let the batter rest for 10 minutes.

Heat a non-stick skillet or frying pan over medium heat. Add a small amount of butter or oil to coat the pan.

Pour a ladleful of batter onto the pan and swirl it around to spread it evenly. Cook for about 1-2 minutes, or until the edges start to look golden and the surface is set.

Flip the blini and cook for another 1-2 minutes, or until golden brown.

Remove the blini from the pan and keep warm. Repeat with the remaining batter, adding more butter or oil as needed.

Serve the blini warm with your favorite toppings such as sour cream, caviar, jam, or honey.
