How To Make Easy Blini (Russian Pancake)

No breakfast is complete without hot stacks of delicious pancakes! You may not be a morning person now, but with our yummy pancake recipes you certainly will be! Serves:

Ingredients

  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 cup milk
  • 2 large eggs
  • 2 tbsp melted butter
  • Additional butter or oil for cooking
  • Toppings of your choice (e.g. butter, sour cream, jam, smoked salmon)

Instructions

  1. In a large bowl, whisk together the flour, baking powder, and salt.

  2. In a separate bowl, whisk together the milk, eggs, and melted butter.

  3. Slowly pour the wet ingredients into the dry ingredients, whisking until just combined. Be careful not to overmix.

  4. Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or oil.

  5. Pour about 1/4 cup of batter into the skillet for each pancake, spreading it out into a thin circle with the back of a spoon.

  6. Cook the pancakes for about 2 minutes, or until bubbles form on the surface. Flip and cook for an additional 1-2 minutes, or until golden brown.

  7. Transfer the cooked pancakes to a plate and keep warm. Repeat with the remaining batter.

  8. Serve the blini with your desired toppings, such as melted butter, sour cream, jam, or smoked salmon.
