Ingredients

  • 2 pounds corned beef brisket
  • 4 cups water
  • 1 tablespoon pickling spices
  • 4 cloves garlic, minced
  • 1 onion, sliced
  • 4 carrots, peeled and cut into chunks
  • 4 potatoes, peeled and quartered
  • 1 cabbage, cut into wedges
  • Salt and pepper to taste

Instructions

  1. Rinse the corned beef under cold water and pat dry.

  2. In a large pot, bring the water to a boil and add the pickling spices.

  3. Add the corned beef, garlic, and onion to the pot.

  4. Reduce the heat to low, cover, and simmer for 2 hours, or until the beef is tender.

  5. Skim off any fat that rises to the surface.

  6. Add the carrots, potatoes, and cabbage to the pot, and cook for another 30 minutes, or until the vegetables are tender.

  7. Season with salt and pepper to taste.

  8. Remove the corned beef roast from the pot and let it rest for 10 minutes before slicing.

  9. Serve the sliced corned beef with the cooked vegetables.
