  • 1/4 cup shredded cheddar cheese
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil

Instructions

  1. In a large bowl, whisk together the eggs, salt, and black pepper until well beaten.

  2. Heat the olive oil in a non-stick skillet over medium heat.

  3. Add the diced bell peppers, tomatoes, onions, and mushrooms to the skillet and cook for 2-3 minutes until softened.

  4. Pour the beaten eggs over the vegetables in the skillet.

  5. Sprinkle the shredded cheddar cheese on top of the eggs.

  6. Cook the omelet for 3-4 minutes, or until the edges start to set.

  7. Carefully flip the omelet over using a spatula and cook for an additional 3 minutes, or until the eggs are fully cooked.

  8. Remove the omelet from the skillet and cut into quarters.

  9. Serve hot and enjoy!
