How To Make Green Bell Pepper and Quinoa Salad
A refreshing and healthy salad with quinoa, crisp green bell peppers, and a tangy lemon dressing.
Serves:
Ingredients
- 1 cup quinoa
- 2 cups water
- 2 green bell peppers, diced
- 1 small red onion, diced
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh mint
- 1/4 cup olive oil
- 1/4 cup freshly squeezed lemon juice
- 2 cloves garlic, minced
- Salt and pepper to taste
Instructions

Rinse quinoa thoroughly and drain. Place it in a pot with the water and bring to a boil. Reduce heat to low, cover and simmer for 15-20 minutes or until the water is absorbed and the quinoa is tender.

In a large bowl, mix together the cooked quinoa, diced bell peppers, diced onion, parsley, and mint.

In a small bowl, whisk together the olive oil, lemon juice, garlic, salt, and pepper.

Pour the dressing over the salad and toss to combine.

Serve chilled or at room temperature.
