A refreshing and healthy salad with quinoa, crisp green bell peppers, and a tangy lemon dressing.

Serves:

Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 2 green bell peppers, diced
  • 1 small red onion, diced
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh mint
  • 1/4 cup olive oil
  • 1/4 cup freshly squeezed lemon juice
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. Rinse quinoa thoroughly and drain. Place it in a pot with the water and bring to a boil. Reduce heat to low, cover and simmer for 15-20 minutes or until the water is absorbed and the quinoa is tender.

  2. In a large bowl, mix together the cooked quinoa, diced bell peppers, diced onion, parsley, and mint.

  3. In a small bowl, whisk together the olive oil, lemon juice, garlic, salt, and pepper.

  4. Pour the dressing over the salad and toss to combine.

  5. Serve chilled or at room temperature.
