  • 1 ½ cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp cinnamon
  • ¼ tsp nutmeg
  • ¼ tsp salt
  • 1 cup cooked and mashed butternut squash
  • ½ cup brown sugar
  • ¼ cup vegetable oil
  • ¼ cup milk
  • 1 egg
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 375°F (190°C). Grease a muffin tin or line with paper liners.

  2. In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.

  3. In another bowl, combine the mashed butternut squash, brown sugar, vegetable oil, milk, egg, and vanilla extract.

  4. Pour the wet ingredients into the dry ingredients and stir until just combined.

  5. Spoon the batter into the muffin tin, filling each cup about ¾ full.

  6. Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.

  7. Allow the muffins to cool for a few minutes in the tin, then transfer to a wire rack to cool completely.
