  • 2 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, cold and cubed
  • 1/4 to 1/2 cup ice water

Instructions

  1. In a large bowl, whisk together the flour and salt.

  2. Add the cold butter cubes to the flour mixture and use a pastry cutter or your fingers to cut the butter into the flour until it resembles coarse crumbs.

  3. Gradually add the ice water, 1 tablespoon at a time, and mix until the dough comes together. Avoid overmixing.

  4. Divide the dough into two equal portions and shape each portion into a disc. Wrap them tightly in plastic wrap and refrigerate for at least 1 hour.

  5. When ready to use, lightly flour a clean surface and rolling pin. Roll out the pastry dough to your desired thickness.

  6. Use the dough to line your pie or tart pans, and proceed with your chosen recipe.
