This fresh and fragrant rosemary bread is a great companion for soups and can also be used for dipping or as a base for an open-faced turkey sandwich.

Ingredients

  • 3 cups bread flour, plus more for dusting
  • 1 cup water, warm
  • 2 tbsp rosemary, fresh, finely chopped and divided
  • 2 tbsp sage, fresh, finely chopped, and divided
  • 3 tbsp granulated sugar
  • 1 tbsp active dry yeast
  • 1 tsp salt
  • cooking spray

Instructions

  1. In a bowl, dissolve the sugar and yeast in warm water. Ensure that the warm water measures no more than 130 degrees Fahrenheit to avoid “killing” the yeast.

  2. Cover and set aside. Allow the yeast to bloom for roughly 15 minutes at room temperature.

  3. In a large bowl, sift together bread flour, and salt. Make a well at the center, then pour in your bloomed yeast mixture.

  4. Add 1½ tablespoons of your herbs, then fold until a dough is formed.

  5. Dust your working area with flour, then knead the dough for roughly 10 to 12 minutes until smooth and elastic.

  6. Grease a large bowl with cooking spray. Place the kneaded dough in it, cover, and set aside in a warm area. Allow the dough to rise for at least 1 hour, no more than 3 hours.

  7. While waiting, grease a Dutch oven and its lid with cooking spray then preheat your oven to 450 degrees F.

  8. Dust your working area once more with flour. Punch the dough down once risen, and shape this as desired.

  9. Cover once more with a towel and allow them to rise for an additional 45 minutes to 1 hour.

  10. Sprinkle with the remaining herbs on top of your dough then cover with the greased lid.

  11. Bake the dough for 30 minutes. It should appear to be pale brown after that.

  12. Remove the lid and continue baking for roughly 15 minutes or until golden brown and crusty.

  13. Once fully baked, set aside at room temperature while still in the Dutch oven until completely cool. Portion accordingly and serve!
