Ingredients

  • 8 oz mozzarella cheese, cut into 1-inch cubes
  • cup glutinous rice flour, plus more for dusting
  • ¼ cuo water, (up to ⅓ cup), hot
  • tbsp cake flour, sifted
  • 1 tbsp granulated sugar
  • 1 tbsp unsalted butter, at room temperature
  • ¼ tsp salt
  • tsp baking powder
  • 5 cups vegetable oil, (up to 8 cups), for frying

To serve:

  • ¼ cup marinara sauce

Instructions

  1. In a large mixing bowl, combine both flours, sugar, salt, and baking powder.

  2. Pour ¼ cup hot water in the center then mix until it clumps together. You may need to add more hot water as needed.

  3. Add your butter, then knead until a smooth dough is formed.

  4. Set the dough aside for at least 30 minutes to rest at room temperature.

  5. Once the dough has rested, portion into 1 oz balls.

  6. Flatten your dough balls with your fingers, then place a mozzarella cube in your dough, then stick the dough together, eventually rolling back into a ball.

  7. Repeat until you have used up your mozzarella cubes and dough. Set aside.

  8. Preheat your oil ready for frying.

  9. Deep fry your mozzarella balls in batches for roughly 5 to 7 minutes until golden brown and crispy.

  10. Drain onto a plate lined with paper towels.

  11. Serve immediately with marinara sauce on the side.
