This easy Spanish tomato bread is made with toasted bread brushed with garlic, topped with tomato, and finished with a drizzle of olive oil.

- 1large tomato,chopped
- 2slicescrusty bread
- 1clovegarlic,halved
- 1tbspextra virgin olive oil,or to taste
- salt,to taste
Instructions

Place tomato in a blender. Blend until smooth.

Toast the bread for 1 to 3 minutes until browned. Rub each slice of toast with garlic. (This is easier to do if the peel is left on.)

Top each slice of toast with pureed tomato. Drizzle with olive oil and sprinkle with salt.
