How To Make Tex Mex Beef Casserole Recipe

Ingredients

  • 1 pound ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes, drained
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 can (15 oz) corn, drained
  • 1 tbsp chili powder
  • 1 tsp ground cumin
  • 1/2 tsp salt
  • 1/2 cup sour cream
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup tortilla chips, crushed

Instructions

  1. Preheat oven to 375°F.

  2. In a large skillet over medium-high heat, cook ground beef until browned.

  3. Add onion and garlic, and cook until softened.

  4. Add diced tomatoes, black beans, corn, chili powder, cumin, and salt. Stir well to combine.

  5. Pour mixture into a 9×13 inch baking dish.

  6. In a small bowl, mix together sour cream and shredded cheese. Spoon mixture over beef mixture in baking dish.

  7. Sprinkle crushed tortilla chips over the top.

  8. Bake in preheated oven for 20 minutes, or until heated through and bubbly.
