Ingredients

  • 1.5 lbs beef stew meat, cubed
  • 2 cups chopped vegetables (carrots, celery, onion)
  • 2 cups beef broth
  • 1 cup red wine
  • 2 tbsp tomato paste
  • 2 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 tsp salt
  • ½ tsp black pepper
  • 2 tbsp cornstarch
  • 2 tbsp water

Instructions

  1. In a slow cooker, combine beef, vegetables, beef broth, red wine, tomato paste, garlic, thyme, salt, and black pepper. Stir to combine.

  2. Cover and cook on low heat for 6 hours.

  3. In a small bowl, whisk together cornstarch and water.

  4. Stir cornstarch mixture into the slow cooker and cook for an additional 30 minutes, until the sauce thickens.

  5. Serve hot with your choice of side.
