Ingredients

  • 1 pound beef chuck, cut into cubes
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 can diced tomatoes
  • 1/2 cup beef broth
  • 1/2 cup red wine
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup crumbled feta cheese

Instructions

  1. Preheat the oven to 350°F.

  2. In a large oven-safe casserole dish, brown the beef over medium-high heat.

  3. Add the onion, garlic, and bell pepper and sauté until soft.

  4. Add the diced tomatoes, beef broth, red wine, oregano, thyme, salt, and black pepper. Stir to combine.

  5. Cover the casserole dish and bake for 2 hours, until the beef is tender.

  6. Remove from the oven and sprinkle crumbled feta cheese over the top.

  7. Return to the oven, uncovered, and bake for an additional 10 minutes, until the cheese is melted and bubbly.

  8. Serve hot with crusty bread or over pasta.
