Ingredients

  • 1 lb beef chuck, cut into bite-sized pieces
  • 1 tbsp olive oil
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 2 tbsp tomato paste
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/2 tsp cayenne pepper
  • 1 can diced tomatoes
  • 1 cup beef broth
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • Salt and pepper
  • Fresh parsley for garnish

Instructions

  1. Preheat oven to 350°F.

  2. In a large oven-safe casserole dish, heat olive oil over medium-high heat.

  3. Add beef and cook until browned on all sides. Remove and set aside.

  4. Add onion and garlic to the same pan and sauté for 3-5 minutes until softened.

  5. Add tomato paste, cumin, paprika, and cayenne pepper and cook for another minute until fragrant.

  6. Add diced tomatoes and beef broth, scraping the bottom of the pan to release any browned bits.

  7. Add beef back to the casserole dish, along with diced bell peppers, and season with salt and pepper.

  8. Cover with a lid and bake in the oven for 2 hours.

  9. Garnish with fresh parsley and serve hot.
