Serves:

Ingredients

  • 1 pound of beef stew meat, cut into bite-sized pieces
  • 4 large potatoes, sliced into rounds
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 cup of beef broth
  • 1/2 cup of heavy cream
  • 1 cup of shredded cheddar cheese
  • 2 tbsp of olive oil
  • salt and pepper to taste
  • fresh parsley, finely chopped (optional)

Instructions

  1. Preheat the oven to 375°F.

  2. In a large skillet over medium-high heat, heat the olive oil and add the beef. Cook until browned on all sides.

  3. Add the onions and garlic to the skillet and cook until the onions are translucent.

  4. Add the beef broth to the skillet and bring to a simmer. Reduce heat and let simmer for 10 minutes.

  5. In a separate bowl, mix together the heavy cream and shredded cheddar cheese.

  6. In a 9×13 inch baking dish, layer the sliced potatoes and seasoned with salt and pepper.

  7. Pour the beef mixture over the potatoes and spread evenly.

  8. Pour the cheese mixture over the beef and spread evenly.

  9. Cover the baking dish with aluminum foil and bake for 45-50 minutes or until the potatoes are tender.

  10. Remove from the oven and let it cool for 5 minutes.

  11. Garnish with fresh parsley if desired. Serve and enjoy!
