How To Make Mexican Beef Casserole Recipe
A cheesy beef and vegetable casserole with Mexican-inspired flavors.

Ingredients
- 1 lb ground beef
- 1 onion, chopped
- 1 red bell pepper, chopped
- 1 can (14.5 oz) diced tomatoes, drained
- 1 cup frozen corn
- 1 can (4 oz) diced green chilies
- 2 tsp chili powder
- 1 tsp cumin
- 1 tsp garlic powder
- 1 tsp salt
- 2 cups shredded Mexican cheese blend
- Cilantro, chopped (optional)
Instructions

Preheat oven to 375°F.

In a large skillet, cook ground beef, onion, and red bell pepper until beef is browned and vegetables are tender. Drain any excess grease.

Add diced tomatoes, frozen corn, green chilies, chili powder, cumin, garlic powder, and salt to skillet. Stir to combine.

Pour mixture into a 9×13 inch baking dish. Top with shredded cheese.

Bake for 25-30 minutes, or until cheese is melted and bubbly.

Garnish with cilantro, if desired.
