Ingredients
- 1 cup conch meat, finely chopped
- 1/2 cup all-purpose flour
- 1/4 cup cornmeal
- 1/4 cup bell pepper, diced
- 1/4 cup onion, diced
- 2 cloves garlic, minced
- 2 green onions, chopped
- 1 jalapeno, seeded and minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon paprika
- 1/4 teaspoon dried thyme
- Vegetable oil, for frying
Instructions

In a large bowl, combine the conch meat, flour, cornmeal, bell pepper, onion, garlic, green onions, jalapeno, salt, black pepper, paprika, and dried thyme. Mix well until all the ingredients are evenly incorporated.

Heat vegetable oil in a deep frying pan or deep fryer to 350°F (175°C).

Drop rounded spoonfuls of the conch mixture into the hot oil, being careful not to overcrowd the pan. Fry the fritters in batches for about 3-4 minutes per side or until golden brown and crispy.

Remove the fritters from the oil and transfer them to a paper towel-lined plate to drain excess oil.

Serve the conch fritters hot with your favorite dipping sauce or tartar sauce.
