Ingredients

  • 4 cups of sponge cake, cubed
  • 2 cups of mixed berries (strawberries, blueberries, raspberries)
  • 2 cups of custard
  • 2 cups of whipped cream
  • 1/4 cup of sherry (optional)
  • Fresh mint leaves for garnish

Instructions

  1. In individual serving glasses or a trifle dish, layer half of the sponge cake cubes.

  2. Sprinkle half of the sherry (if using) evenly over the cake.

  3. Spread half of the mixed berries on top of the cake.

  4. Pour half of the custard over the berries.

  5. Repeat steps 1-4 to create a second layer.

  6. Finish by topping the trifle with a generous layer of whipped cream.

  7. Garnish with fresh mint leaves.

  8. Chill in the refrigerator for at least 1 hour before serving.
