How To Make Bison and Black Bean Soup Recipe

A hearty, Southwest-inspired soup featuring lean bison meat and fiber-rich black beans.

Ingredients

  • 1 lb ground bison meat
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1/4 tsp cayenne pepper
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (15 oz) black beans, rinsed and drained
  • 4 cups beef broth
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Add bison meat and cook until browned, about 5 minutes.
  2. Add onion and garlic and cook, stirring occasionally, until softened, about 5 minutes.
  3. Add chili powder, cumin, and cayenne pepper and cook for 1 minute.
  4. Stir in diced tomatoes, black beans, and beef broth. Bring to a boil, then reduce heat and simmer for 1 1/2 to 2 hours.
  5. Season with salt and pepper to taste.
