Ingredients

  • 1 lb ground bison
  • 2 large sweet potatoes, peeled and diced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. In a large skillet or cast iron pan, heat olive oil over medium-high heat.

  2. Add diced sweet potatoes and cook until tender, stirring occasionally for about 10 minutes.

  3. Add bell peppers, onion, and garlic to the pan and cook for another 5 minutes.

  4. Season with salt and pepper to taste.

  5. Add ground bison to the pan and continue cooking until the meat is fully cooked, stirring frequently for another 10-15 minutes.

  6. Serve hot and enjoy.
