How To Make Bison Bolognese Recipe

A hearty meat sauce made with ground bison, vegetables, and red wine served over pasta.

Ingredients

  • 1 pound ground bison
  • 1 onion, diced
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • 4 cloves garlic, minced
  • 1 cup red wine
  • 1 can crushed tomatoes (28 oz)
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • salt and pepper to taste
  • 12 oz pasta

Instructions

  1. In a large pot or dutch oven, brown the ground bison over medium-high heat.
  2. Add the onion, carrots, and celery and cook until tender, about 5 minutes.
  3. Add the garlic and cook for an additional minute.
  4. Pour in the red wine and simmer until reduced by half, about 10 minutes.
  5. Add the crushed tomatoes, basil, oregano, salt, and pepper and bring to a simmer.
  6. Reduce the heat to low and simmer for 1.5-2 hours, stirring occasionally.
  7. Cook the pasta according to package instructions and serve with the bolognese sauce.
