Bison Enchiladas Recipe

How To Make Bison Enchiladas

Flavorful enchiladas stuffed with ground bison, topped with cheese and enchilada sauce.

Ingredients

  • 1 lb ground bison
  • 1 tbsp olive oil
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 8 corn tortillas
  • 1 cup enchilada sauce
  • 1 cup shredded Mexican blend cheese

Instructions

  1. Preheat oven to 375°F.

  2. In a large skillet, heat olive oil over medium-high heat. Add onion and garlic and sauté until softened.

  3. Add ground bison to the skillet and cook until browned. Drain excess grease.

  4. Stir in chili powder, cumin, oregano, salt, and black pepper.

  5. Warm up corn tortillas in microwave or oven.

  6. Spread 1/2 cup of enchilada sauce on the bottom of an 8×8 inch baking dish.

  7. Fill each tortilla with bison mixture. Roll up and place seam side down in the baking dish.

  8. Pour remaining enchilada sauce over the tortillas and sprinkle with cheese.

  9. Bake for 20-25 minutes or until the cheese is melted and the enchiladas are heated through.
