How To Make Bison Pot Roast Recipe

Ingredients

  • 2 lbs bison chuck roast
  • 2 tbsp olive oil
  • 1 onion, sliced
  • 3 cloves garlic, minced
  • 2 cups beef broth
  • 1/2 cup red wine
  • 2 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 325°F.
  2. Heat olive oil in a large Dutch oven over medium-high heat.
  3. Sear the bison roast on all sides until browned.
  4. Remove the bison from the Dutch oven and set aside.
  5. Add onions and garlic to the pot and sauté until onions are translucent.
  6. Add the beef broth, red wine, tomato paste, thyme, and bay leaf to the Dutch oven and stir to combine.
  7. Place the bison back in the Dutch oven and bring the mixture to a simmer.
  8. Cover the Dutch oven with a lid and place it into the oven.
  9. Cook for 3 hours or until the bison is fork-tender.
  10. Remove the bay leaf and adjust seasoning with salt and pepper to taste.
  11. Slice the bison and serve with the cooking liquid as gravy.
