Celery stuffed with briny clams and cheese that bring a different taste to your table.

Ingredients

  • 6 celery stalks, cut in half crosswise
  • 10 oz clams, drained, liquid reserved, minced
  • ½ cup ricotta cheese, part-skim
  • 1 garlic clove, minced
  • 1 tbsp fresh lemon juice
  • 1 tsp onion, minced
  • tsp red, cayenne pepper
  • 3 tbsp dill, or tsp. dried dill weed, snipped

Instructions

  1. Place all ingredients except dill and celery in a blender or a food processor fitted with the metal blade and process until smooth.

  2. Add clam liquid if needed to thin; stir in the dill.

  3. Stuff celery stalks with cheese mixture.
