Ingredients
- 6 celery stalks, cut in half crosswise
- 10 oz clams, drained, liquid reserved, minced
- ½ cup ricotta cheese, part-skim
- 1 garlic clove, minced
- 1 tbsp fresh lemon juice
- 1 tsp onion, minced
- ⅛ tsp red, cayenne pepper
- 3 tbsp dill, or tsp. dried dill weed, snipped
Instructions

Place all ingredients except dill and celery in a blender or a food processor fitted with the metal blade and process until smooth.

Add clam liquid if needed to thin; stir in the dill.

Stuff celery stalks with cheese mixture.
