How To Make Clam-Stuffed Celery

Clams stuffed with ingredients that bring a different taste to your table.

  • 6 celery stalks (cut in half crosswise)
  • 10 oz clams (drained, liquid reserved, minced )
  • ½ cup ricotta cheese (part-skim )
  • 1 garlic clove (minced)
  • 1 tbsp fresh lemon juice
  • 1 tsp onion (minced )
  • ⅛ tsp red (cayenne pepper)
  • 3 tbsp dill (or tsp. dried dill weed, snipped )
  1. Place all ingredients except dill and celery in a blender or a food processor fitted with the metal blade and process until smooth.

  2. Add clam liquid if needed to thin; stir in the dill.

  3. Stuff celery stalks with cheese mixture.

  4. Makes about 1- to 1/4 cup filling.
