  • cupsstale loaf bread,trimmed, cut into medium dice*
  • ozFuji apples,or Braeburn, cored, cut into medium dice
  • ½cupunsalted butter,diced
  • cupscelery,diced
  • 1cupyellow onions,chopped
  • ¾cupdried cranberries
  • 3tbspfresh parsley,chopped
  • ¾tbspfresh rosemary,chopped
  • ½tspdried thyme
  • ½tspdried sage
  • cupschicken broth,plus more as needed
  • salt and ground black pepper,to season
  • cooking spray

To Serve:

  • parsley,chopped

Instructions

  1. Preheat the oven to 325 degrees F. Grease a baking casserole of your choice with cooking spray.

  2. Melt butter in a large skillet over medium heat. Add the celery and onion. Sauté until translucent.

  3. Add in the apples and sauté for about 3 to 4 minutes, or until they begin to soften slightly. Remove from heat, then toss in the cranberries, parsley, rosemary, thyme, and sage.

  4. Pour stale bread cubes into an extra-large mixing bowl. Pour the apple mixture over the bread cubes and season lightly with salt and pepper to taste.

  5. Evenly pour in 1 cup of the chicken broth, then gently toss the mixture. Slowly pour in more broth as needed, and gently toss until the bread has nearly soaked entirely through.

  6. Pour bread mixture into the baking dish and gently spread into an even layer.

  7. Cover the baking dish with foil and bake in the preheated oven for 15 minutes. Then, uncover and bake for 15 to 25 minutes longer, until warmed through and the top is golden brown.

  8. Portion accordingly and garnish with parsley. Enjoy!
