  • 1 cup fresh blueberries
  • 1/4 cup water
  • 1/4 cup maple syrup
  • 1 tbsp lemon juice
  • 1 tsp cornstarch

Instructions

  1. In a saucepan, combine blueberries, water, maple syrup, and lemon juice.

  2. Heat on medium-high heat, stirring occasionally, until mixture starts to boil.

  3. In a small bowl, mix cornstarch with 1 tbsp water until dissolved.

  4. Add cornstarch mixture to the blueberry mixture and stir well for 1-2 minutes until thickened.

  5. Remove from heat and let cool. Serve over pancakes or waffles.
