Ingredients

  • 4 cups water
  • 1/4 cup salt
  • 1/4 cup sugar
  • 2 bay leaves
  • 1 tablespoon whole black peppercorns
  • 4 cloves garlic, crushed
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • 1 teaspoon dried sage

Instructions

  1. In a large pot, combine water, salt, sugar, bay leaves, peppercorns, garlic, rosemary, thyme, and sage. Stir until the salt and sugar dissolve.

  2. Place the pot over medium heat and bring the brine to a simmer. Cook for 5 minutes to allow the flavors to meld together. Remove from heat and let it cool completely.

  3. Once the brine has cooled, place the pork (such as chops or tenderloin) in a large resealable plastic bag or container. Pour the brine over the pork, making sure it is completely submerged. Seal the bag or container and refrigerate for at least 4 hours, or overnight for best results.

  4. After the brining time, remove the pork from the brine and pat it dry with paper towels. Discard the brine.

  5. Proceed with your favorite pork recipe, whether it’s grilling, roasting, or pan-frying. The brine will have added moisture and flavor to the pork, resulting in a more delicious and tender dish.
