How To Make Chicken Scallopini

Ingredients
- 4 boneless, skinless chicken breasts
- 1/2 cup all-purpose flour
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp olive oil
- 4 tbsp butter
- 1/2 cup chicken broth
- 1/4 cup fresh lemon juice
- 1/4 cup capers
- 1/4 cup chopped fresh parsley
Instructions

In a shallow dish, mix flour, salt, and black pepper. Dredge chicken breasts in the flour mixture, shaking off any excess.

In a large skillet, heat olive oil and 2 tablespoons of butter over medium heat. Add the chicken breasts and cook for about 4 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.

In the same skillet, add the chicken broth, lemon juice, and capers. Bring to a simmer and cook for 2 minutes, stirring occasionally. Add the remaining 2 tablespoons of butter and stir until melted and well combined.

Return the chicken breasts to the skillet and coat them in the sauce. Cook for an additional 2 minutes to heat through.

Serve the chicken scallopini garnished with fresh parsley.
