Serves:
Ingredients
- 1 lb beef chuck roast, trimmed and cut into small cubes
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 jalapeno pepper, seeded and minced
- 1 cup cornmeal
- 1 cup beef broth
- 1 tsp chili powder
- 1 tsp cumin
- 1/2 tsp salt
- 1/4 tsp black pepper
- 8-10 dried corn husks, soaked in water
Instructions
-
In a large skillet, heat some oil and sauté the beef, onion, garlic, and jalapeno until the beef is browned.
-
In a separate bowl, mix together the cornmeal, beef broth, chili powder, cumin, salt, and black pepper until well combined.
-
Add the cornmeal mixture to the skillet with the beef and stir until thickened.
-
Remove the skillet from heat and let the mixture cool slightly.
-
Drain the corn husks and pat them dry. Place about 1/4 cup of the beef mixture onto each corn husk and fold the sides over to enclose the filling.
-
Place the tamales in a steamer and steam for about 1.5 to 2 hours, or until the corn husks easily peel away from the tamales.
-
Serve the beef tamales warm with your favorite salsa or sauce.
