Serves:

Ingredients

  • 1turkey’s gibletsincluding neck, liver, gizard, and heart
  • ½ onionchopped
  • 2stalkscelerychopped
  • 4cupsturkey drippingsor stock, broth, or combination
  • 3tbspherbsfresh, chopped
  • Saltto taste
  • Pepperto taste
  • 4tbspbutter
  • 4tbspflour
  • 1cupcold wateror cold broth

Instructions

  1. Rinse giblets and in a saucepan combine with onions, celery, and turkey broth.

  2. Bring to a boil, then reduce heat and simmer covered for 1 hour.

  3. Strain and save the broth. Remove any meat from the neck if desired and discard the bones, celery, and onions.

  4. Finely chop the remaining giblets and set aside.

  5. In a saucepan, melt butter and flour. Cook for 1 minute.

  6. Slowly add broth, whisking after each addition until smooth. Stir in chopped giblets and simmer for 2 to 3 minutes.

  7. Add fresh herbs and season with salt and pepper to taste.

  8. Serve and enjoy!

Recipe Notes

 

You can also thicken the gravy using cornstarch instead of flour. Skip the butter and combine equal parts cornstarch and cold water or broth. Mix well, then stir into the simmering broth a little at a time until the desired consistency is reached. Finally, add the giblets and proceed with the rest of the recipe.
