Who knew a salad dressing could have such a big impact? This dressing from Trader Joe’s adds so much more flavor to your salads without piling on the calories.

Serves:

Ingredients

  • 5 oz carrots, grated
  • 3 tbsp ginger, fresh, minced
  • 8 tbsp olive oil
  • 6 tbsp rice vinegar
  • tbsp miso paste
  • 2 tbsp water, add more as needed
  • salt and ground black pepper, to taste

To Serve:

  • 3 oz cucumbers, per serving
  • 3 oz apples, per serving
  • 2 oz tomatoes, per serving
  • 2 oz lettuce, per serving

Instructions

  1. Place all ingredients in a blender or food processor and puree until smooth. Add water as necessary to achieve your desired texture.

  2. Season to taste with salt and pepper. Adjust accordingly.

  3. Serve 3 tablespoons of dressing over salad.
