How To Make Warm Halloumi Chickpea Lime Salad

Ingredients
- 250g halloumi, sliced
- 1 can chickpeas, drained and rinsed
- 2 cups mixed salad greens
- 1 avocado, sliced
- 1/4 cup chopped fresh cilantro
- Juice of 1 lime
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions

Heat a grill pan or skillet over medium heat. Place the halloumi slices in the pan and cook for 2-3 minutes on each side, until golden brown.

In a large bowl, combine the chickpeas, salad greens, avocado, and cilantro.

In a small bowl, whisk together the lime juice, olive oil, salt, and pepper. Pour the dressing over the salad and toss to combine.

Divide the salad among 4 plates and top each with grilled halloumi slices.
