Ingredients

  • 250g halloumi, sliced
  • 1 can chickpeas, drained and rinsed
  • 2 cups mixed salad greens
  • 1 avocado, sliced
  • 1/4 cup chopped fresh cilantro
  • Juice of 1 lime
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Heat a grill pan or skillet over medium heat. Place the halloumi slices in the pan and cook for 2-3 minutes on each side, until golden brown.

  2. In a large bowl, combine the chickpeas, salad greens, avocado, and cilantro.

  3. In a small bowl, whisk together the lime juice, olive oil, salt, and pepper. Pour the dressing over the salad and toss to combine.

  4. Divide the salad among 4 plates and top each with grilled halloumi slices.

  5. Serve warm and enjoy!
