Ingredients

  • 4 cups of cubed watermelon
  • 200g halloumi cheese, sliced
  • 1 cup of fresh mint leaves
  • 1 cup of fresh basil leaves
  • 1/4 cup of extra virgin olive oil
  • 2 tbsp of balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. Preheat a grill or grill pan over medium-high heat.

  2. In a large bowl, combine the watermelon, mint leaves, and basil leaves.

  3. In a separate small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper.

  4. Brush the halloumi slices with olive oil and grill for 2-3 minutes on each side until lightly charred.

  5. Add the grilled halloumi to the watermelon and herb mixture.

  6. Drizzle the dressing over the salad and gently toss to combine.

  7. Serve immediately and enjoy!
