How To Make Watermelon & Herb Salad with Grilled Halloumi

Ingredients
- 4 cups of cubed watermelon
- 200g halloumi cheese, sliced
- 1 cup of fresh mint leaves
- 1 cup of fresh basil leaves
- 1/4 cup of extra virgin olive oil
- 2 tbsp of balsamic vinegar
- Salt and pepper to taste
Instructions

Preheat a grill or grill pan over medium-high heat.

In a large bowl, combine the watermelon, mint leaves, and basil leaves.

In a separate small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper.

Brush the halloumi slices with olive oil and grill for 2-3 minutes on each side until lightly charred.

Add the grilled halloumi to the watermelon and herb mixture.

Drizzle the dressing over the salad and gently toss to combine.
