These peppers are stuffed with a savory mixture of spinach and feta cheese that’s both healthy and delicious.

  • 4 large bell peppers, halved and seeded
  • 2 cups chopped fresh spinach
  • 1 cup crumbled feta cheese
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh dill
  • 1/4 cup chopped fresh mint
  • Salt and black pepper to taste
  • 2 tbsp olive oil


  1. Preheat the oven to 375°F.

  2. In a large mixing bowl, combine the spinach, feta cheese, parsley, dill, and mint.

  3. Season with salt and black pepper to taste.

  4. Stuff the pepper halves with the spinach and feta filling and place them in a baking dish.

  5. Drizzle the olive oil over the peppers.

  6. Cover with foil and bake for 20 minutes.

  7. Remove the foil and bake for another 15 minutes, or until the peppers are tender and the filling is golden brown.

  8. Serve hot.
