Serves:

Ingredients

  • 2 blocks of halloumi cheese, sliced
  • 2 tsp Cajun seasoning
  • 1 can (15 oz) black-eyed beans, rinsed and drained
  • 1 red bell pepper, diced
  • 1 small red onion, finely chopped
  • 1 jalapeno, seeded and minced
  • 1 lime, juiced
  • 2 avocados, pitted and mashed
  • 1 tbsp fresh cilantro, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat grill to medium heat.

  2. Sprinkle Cajun seasoning on both sides of halloumi slices.

  3. Grill halloumi for 2-3 minutes on each side until grill marks appear. Set aside.

  4. In a large bowl, combine black-eyed beans, red bell pepper, red onion, jalapeno, and lime juice. Mix well and season with salt and pepper.

  5. In a separate bowl, prepare guacamole by mashing avocados and mixing in cilantro. Season with salt and pepper.

  6. Serve grilled halloumi with lime black-eyed bean salad and a side of guacamole.
