How To Make Quinoa Salad with Grilled Halloumi

Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 tsp olive oil
  • 8 oz halloumi cheese, sliced
  • 2 cups mixed greens
  • 1 cup cherry tomatoes, halved
  • 1/2 cup cucumber, diced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup Kalamata olives, pitted and halved
  • 2 tbsp fresh mint, chopped
  • 2 tbsp fresh parsley, chopped
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions

  1. Rinse the quinoa under cold water, then place in a saucepan with the water. Bring to a boil, then reduce heat and simmer for 15 minutes or until the quinoa is tender. Drain any excess water and let cool.

  2. Meanwhile, preheat a grill or grill pan over medium-high heat. Brush the halloumi slices with olive oil and grill for 2-3 minutes per side or until grill marks appear. Remove from heat and set aside.

  3. In a large bowl, combine the cooked quinoa, mixed greens, cherry tomatoes, cucumber, red onion, Kalamata olives, mint, and parsley.

  4. In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper. Pour the dressing over the salad and toss to coat.

  5. Divide the salad among 4 plates and top each with grilled halloumi slices.

  6. Serve immediately and enjoy!
