How To Make Quinoa Salad with Grilled Halloumi

Ingredients
- 1 cup quinoa
- 2 cups water
- 1 tsp olive oil
- 8 oz halloumi cheese, sliced
- 2 cups mixed greens
- 1 cup cherry tomatoes, halved
- 1/2 cup cucumber, diced
- 1/4 cup red onion, thinly sliced
- 1/4 cup Kalamata olives, pitted and halved
- 2 tbsp fresh mint, chopped
- 2 tbsp fresh parsley, chopped
- Juice of 1 lemon
- Salt and pepper to taste
Instructions

Rinse the quinoa under cold water, then place in a saucepan with the water. Bring to a boil, then reduce heat and simmer for 15 minutes or until the quinoa is tender. Drain any excess water and let cool.

Meanwhile, preheat a grill or grill pan over medium-high heat. Brush the halloumi slices with olive oil and grill for 2-3 minutes per side or until grill marks appear. Remove from heat and set aside.

In a large bowl, combine the cooked quinoa, mixed greens, cherry tomatoes, cucumber, red onion, Kalamata olives, mint, and parsley.

In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper. Pour the dressing over the salad and toss to coat.

Divide the salad among 4 plates and top each with grilled halloumi slices.
