Ingredients
- 8 oz Halloumi cheese, slices
- 1 Tbsp olive oil
- 16 slices watermelon, 3-inch squares, about ½-inch thick
- 4 tsp honey
- 8 sprigs fresh mint
Instructions

Heat a non-stick grill pan over medium-high heat for 2 minutes.

Pat Halloumi slices with paper towels to dry them, and brush each slice lightly with olive oil on one side.

Place cheese in a grill pan, oil-side down, and heat for 1 to 2 minutes or until golden.

Brush top side with oil, flip, and cook for 1 to 2 minutes more.

Cut each Halloumi slice in half and layer 4 pieces of cheese with 4 slices of watermelon on a plate.

Make a total of 4 plates.
