How To Make St. Patrick’s Day Irish Potato Bites Recipe

Delicious, bite-sized Irish potatoes filled with bacon, cheese, and green onions. Perfect for celebrating St. Patrick’s Day!

Ingredients

  • 12 baby potatoes
  • 4 slices of bacon, cooked and crumbled
  • 1/2 cup shredded cheddar cheese
  • 2 green onions, thinly sliced
  • 2 tbsp butter, melted
  • Salt and pepper, to taste

Instructions

  1. Preheat the oven to 375°F.

  2. Cut a small slice off the bottom of each potato, so they will stand upright.

  3. Cut off the top of each potato and scoop out the inside, leaving a small border around the edge.

  4. Place the scooped-out potato flesh in a bowl and mash with a fork.

  5. Add the crumbled bacon, shredded cheese, and green onions to the mashed potato and mix well.

  6. Stuff the potato shells with the mashed potato mixture.

  7. Brush the melted butter over the tops of the potatoes and sprinkle with salt and pepper.

  8. Bake in the preheated oven for 20-25 minutes, until the potatoes are tender and the filling is hot and bubbly.

  9. Serve hot and enjoy!
