Ingredients

  • 4 sausages
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 red bell pepper, diced
  • 2 carrots, sliced
  • 1 can of chopped tomatoes
  • 1 cup of chicken broth
  • 1 tsp of dried thyme
  • 1 tsp of smoked paprika
  • Salt and pepper, to taste
  • 1 cup of breadcrumbs
  • 2 tbsp of butter
  • Fresh parsley, for garnish

Instructions

  1. Heat a large skillet over medium heat and cook the sausages until browned. Remove from the skillet and set aside.

  2. In the same skillet, add the onion, garlic, bell pepper, and carrots. Cook until softened.

  3. Add the chopped tomatoes, chicken broth, dried thyme, smoked paprika, salt, and pepper. Stir well.

  4. Cut the sausages into bite-sized pieces and add them back to the skillet. Stir to combine.

  5. Cover the skillet and let simmer for 20 minutes.

  6. Meanwhile, melt the butter in a separate skillet. Add the breadcrumbs and garlic, and cook until golden and crispy.

  7. Serve the sausage casserole with a sprinkle of garlic breadcrumbs and fresh parsley.
