How To Make Prawn, Avocado & Cucumber Salad

Ingredients
- 300g prawns, peeled and deveined
- 2 ripe avocados, sliced
- 1 cucumber, sliced
- 1/4 red onion, thinly sliced
- 2 tbsp chopped fresh cilantro
- Juice of 1 lemon
- 2 tbsp olive oil
- Salt and pepper, to taste
Instructions

Heat a grill pan over medium-high heat. Season the prawns with salt and pepper.

Grill the prawns for 2-3 minutes on each side, until cooked through. Remove from heat and let cool slightly.

In a large bowl, combine avocado, cucumber, red onion, and cilantro. Mix well.

In a small bowl, whisk together lemon juice, olive oil, salt, and pepper. Pour over the avocado mixture and toss to coat.

Add the grilled prawns to the salad and gently mix to combine.

Serve immediately and enjoy!
