How To Make Roasted Cauliflower with Harissa & Chickpea Sauce

Ingredients
- 1 large head of cauliflower, cut into florets
- 2 tablespoons olive oil
- 2 tablespoons harissa paste
- 1 can of chickpeas, drained and rinsed
- 1 cup Greek yogurt
- 2 cloves of garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- Salt and pepper to taste
- Fresh cilantro, for garnish
Instructions

Preheat the oven to 425°F (220°C).

In a large bowl, toss the cauliflower florets with olive oil, harissa paste, salt, and pepper until evenly coated.

Spread the cauliflower on a baking sheet in a single layer and roast for 20-25 minutes, or until golden brown and tender.

Meanwhile, in a small saucepan, combine the chickpeas, Greek yogurt, garlic, cumin, coriander, salt, and pepper. Cook over medium heat until warmed through.

Remove the roasted cauliflower from the oven and serve it with the harissa and chickpea sauce.

Garnish with fresh cilantro and enjoy!
