Ingredients

  • 1 pound spicy sausage, sliced
  • 1 onion, diced
  • 1 bell pepper, diced
  • 2 cloves of garlic, minced
  • 1 can diced tomatoes
  • 1 cup uncooked rice
  • 2 cups chicken broth
  • 1 teaspoon cayenne pepper (optional)
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).

  2. In a large skillet, cook the sausage over medium heat until browned. Remove from the skillet and set aside.

  3. In the same skillet, sauté the onion, bell pepper, and garlic until softened.

  4. Add the diced tomatoes (with juice) and cook for 1-2 minutes.

  5. Stir in the uncooked rice, chicken broth, cayenne pepper (if using), salt, and pepper.

  6. Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 15 minutes.

  7. Stir in the cooked sausage and transfer the mixture to a greased casserole dish.

  8. Cover the dish with foil and bake for 30 minutes.

  9. Remove the foil and bake for an additional 10-15 minutes, or until the rice is cooked and the casserole is heated through.

  10. Serve hot, garnished with chopped fresh parsley.
