Ingredients
- 4 salmon fillets
- 2 tbsp sesame oil
- 1 tbsp soy sauce
- 1 tbsp honey
- 1 tsp minced garlic
- 1 tsp grated ginger
- 1 bunch purple sprouting broccoli
- 2 large sweet potatoes, peeled and cubed
- 2 tbsp butter
- Salt and pepper to taste
- Sesame seeds, for garnish
Instructions

Preheat the oven to 400°F (200°C).

In a small bowl, whisk together the sesame oil, soy sauce, honey, garlic, and ginger. Place the salmon fillets in a baking dish and pour the marinade over them. Let them marinate for 10 minutes.

While the salmon is marinating, wash and trim the purple sprouting broccoli. Steam or boil until tender, about 5-7 minutes. Set aside.

Place the sweet potato cubes in a pot of boiling water and cook until fork-tender, about 10-12 minutes. Drain and return to the pot. Add butter, salt, and pepper. Mash until smooth and creamy.

Heat a non-stick skillet over medium heat. Remove the salmon fillets from the marinade and place them in the skillet, skin side down. Cook for 3-4 minutes, then flip and cook for an additional 3-4 minutes, or until cooked to your desired level of doneness.

Serve the salmon on a bed of sweet potato mash, with the purple sprouting broccoli on the side. Garnish with sesame seeds.
