How To Make Canned Salmon and Vegetable Stir-Fry
A healthy and delicious stir-fry using canned salmon and fresh vegetables.
Serves:
Ingredients
- 2 tbsp oil
- 1 onion, sliced
- 2 garlic cloves, minced
- 1 red pepper, sliced
- 1 yellow pepper, sliced
- 1 zucchini, sliced
- 1 can of salmon, drained
- 2 tbsp soy sauce
- 1 tbsp cornstarch
- Salt and pepper to taste
- Rice to serve
Instructions

Heat oil in a wok or large pan over medium-high heat.

Add onion and garlic and stir-fry for 1-2 minutes until softened.

Add sliced peppers and zucchini and continue to stir-fry for 2-3 minutes until vegetables are tender-crisp.

Add canned salmon and stir-fry for another minute.

In a small bowl, whisk together soy sauce, cornstarch, and 1/4 cup water. Pour over the stir-fry and stir to combine.

Season with salt and pepper to taste and serve with rice.
