How To Make New Potato Soup Recipe

A creamy and comforting soup made with new potatoes, leeks, and herbs.

Ingredients

  • 1 lb new potatoes, peeled and chopped
  • 2 leeks, chopped
  • 2 garlic cloves, minced
  • 4 cups vegetable broth
  • 1 cup milk
  • 2 tbsp butter
  • 1/4 cup chopped parsley
  • Salt and pepper to taste

Instructions

  1. In a large pot, melt butter over medium heat.

  2. Add leeks and garlic and cook until softened.

  3. Add potatoes and broth. Season with salt and pepper.

  4. Bring to a boil, then reduce heat and let simmer for 20-25 minutes until the potatoes are tender.

  5. Using an immersion blender, blend the soup until it’s smooth.

  6. Add milk and parsley, then let simmer for 5 minutes.

  7. Serve hot and enjoy!
