A creamy and comforting soup made with new potatoes, leeks, and herbs.
Serves:
Ingredients
- 1 lb new potatoes, peeled and chopped
- 2 leeks, chopped
- 2 garlic cloves, minced
- 4 cups vegetable broth
- 1 cup milk
- 2 tbsp butter
- 1/4 cup chopped parsley
- Salt and pepper to taste
Instructions

In a large pot, melt butter over medium heat.

Add leeks and garlic and cook until softened.

Add potatoes and broth. Season with salt and pepper.

Bring to a boil, then reduce heat and let simmer for 20-25 minutes until the potatoes are tender.

Using an immersion blender, blend the soup until it’s smooth.

Add milk and parsley, then let simmer for 5 minutes.
