Ingredients
- 1 pork tenderloin (about 1.5 lbs)
- 8 thin slices of prosciutto
- 8 fresh sage leaves
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions

Preheat the oven to 425°F (220°C).

Season the pork tenderloin with salt and pepper.

Lay the prosciutto slices on a baking sheet, slightly overlapping each other.

Place the seasoned pork tenderloin on top of the prosciutto slices.

Wrap the prosciutto tightly around the pork tenderloin.

Heat olive oil in a large oven-safe skillet over medium-high heat.

Add the wrapped pork tenderloin to the skillet, seam side down.

Sear the pork for 2 minutes on each side until the prosciutto is crispy.

Transfer the skillet to the preheated oven and roast for 20-25 minutes, or until the internal temperature reaches 145°F (63°C).

While the pork is roasting, prepare the crispy sage. Heat 1 tbsp of olive oil in a small skillet over medium heat.

Add the sage leaves and cook for about 1 minute on each side until crispy. Remove from heat and set aside.

Once the pork is cooked, remove it from the oven and let it rest for 5 minutes before slicing.

Serve the sliced pork tenderloin topped with the crispy sage leaves.
