How To Make Caramelised Onion & Thyme Sausage Rolls

Ingredients
- 1 tbsp olive oil
- 2 onions, thinly sliced
- 1 tsp sugar
- 1 tsp balsamic vinegar
- 1 tsp fresh thyme leaves
- 400g sausage meat
- 1 sheet puff pastry
- 1 egg, beaten for egg wash
Instructions

Heat olive oil in a pan and sauté the onions until caramelized, stirring occasionally.

Stir in sugar and balsamic vinegar, cook for another minute, then remove from heat and cool.

Preheat the oven to 200°C (400°F) and line a baking sheet with parchment paper.

In a large bowl, mix the caramelized onions, sausage meat, and thyme together until well combined.

Roll out the puff pastry into a rectangle and cut it in half lengthwise.

Divide the sausage mixture in half and shape each portion into a log shape.

Place each sausage log onto the center of each pastry strip.

Brush the edges of the pastry with egg wash and fold over to enclose the sausage, pressing to seal.

Cut each roll into smaller sausage rolls and place them on the prepared baking sheet.

Brush the tops of the sausage rolls with the remaining egg wash.

Bake for 20-25 minutes or until golden brown and cooked through.
