How To Make Emeril Lagasse Chicken and Sausage Gumbo Recipe

A classic New Orleans dish with chicken, sausage, and lots of flavorful veggies.

Serves:

Ingredients

  • 1 lb chicken thighs, boneless and skinless
  • 1 lb smoked sausage, sliced
  • 1 cup onion, chopped
  • 1 cup celery, chopped
  • 1 cup bell pepper, chopped
  • 4 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 1/4 cup vegetable oil
  • 4 cups chicken broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp smoked paprika
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. In a large Dutch oven or pot, heat the oil over medium heat. Add the chicken and sausage and cook until browned, about 7-10 minutes. Remove with a slotted spoon and set aside.

  2. In the same pot, add the onions, celery, bell pepper, and garlic. Cook until the vegetables are softened, about 5-7 minutes. Sprinkle the flour over the vegetables and stir to combine.

  3. Add the chicken broth, Worcestershire sauce, smoked paprika, dried thyme, dried oregano, and bay leaf. Stir to combine and bring to a simmer.

  4. Add the chicken and sausage back into the pot and stir to combine. Simmer for 1 hour, stirring occasionally.

  5. Season with salt and pepper to taste. Serve over rice or with crusty bread.
