Ingredients

  • 4 medium beets, peeled and cubed
  • 6 slices of bacon, cooked and crumbled
  • 2 cups of mixed greens
  • 1/4 cup of crumbled feta cheese
  • 1/4 cup of walnuts, toasted
  • 1/4 cup of balsamic vinegar
  • 1/4 cup of olive oil
  • 2 cloves of garlic, minced
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F.

  2. Toss the cubed beets with olive oil, salt, and pepper.

  3. Roast the beets in the oven for 45 minutes, or until tender.

  4. In a small bowl, whisk together the balsamic vinegar, olive oil, minced garlic, salt, and pepper to make the dressing.

  5. To assemble the salad, arrange the mixed greens on a plate, top with the roasted beets, crumbled bacon, feta cheese, and toasted walnuts.

  6. Drizzle the dressing over the salad and serve.
